New owners ramp up a scaled-down version of Uncle Bud's Catfish

Continue south on Nolensville road, when you hit the stretch of asphalt where the majestic new Nolensville Town Hall is preparing to open its doors on the left side of the road, you just may be too distracted to notice the changes on the right. There is always the automotive shop and a friendly roadhouse with a large porch that serves as a list of country style home cooking on red checkered tablecloths. Nothing has changed, right?

Not so fast there, travelers. (You are not speeding in front of Town Hall again, are you?) Things have changed a lot.This restaurant rustic cabin with porch and the door screen might look a lot Martin barbecue joint, the beloved pig whole restaurant has Nolensville asleep on the radar of the Food Network. But Martin has moved into the street a year and a half ago, about a year before the mayor revolutionary. Since then, the rough restaurant belonged to Uncle Bud.

But hold your horses. (What's your hurry?) This is not the same as Catfish Uncle Bud Buddy Rogers in Franklin opened three decades ago and expanded to a regional brand. That business has changed hands several times and finally disappeared in 2005.

Today, the name of the uncle lives, thanks to entrepreneurs Craig Dever and Jay Smith, who registered the trademark has expired and revived the brand. After an unsuccessful attempt to revive the all-you-can-eat concept in Tullahoma in 2006, the duo recalibrated. Taking into consideration the changing economy and shifting appetites and budgets to eat, Dever and Smith is back with Uncle Bud Catfish Shack, a restaurant concept rather rudimentary, they started at the site of Nolensville Road in 2010.Since then, Smith and Dever (whose father owned the chain until 1995) opened stores in Franklin and Donelson, which launched in January and July, respectively. They plan to open four more stores by the end of 2012.

True to tradition, the majors Uncle Bud Catfish Shack in fried fish and chicken, with toppings such as French fries, white beans and Hush Puppies. Unlike its predecessor, full service, the Shack offers the delights of Southern style in a relaxed quickly.Following the flood of restaurants that have moved away from table service to a hybrid self-service, the cabin puts the customer at work. Order at the counter, pour your own soda, then sit back and wait. Soon, your cat will land on your table.
